What’s the secret to starting change? What if the secret is simply having the motivation to make yourself the right food, right now?
I found a few tasty recipes in the Orange Page magazine (in Japanese) and I’d like to share them with you! I hope this can help you right now! Here is a healthy porridge for breakfast.
Pumpkin and Brown Rice Porridge
One cup of cooked brown rice
160g of pumpkin
180g of onions
2 pieces of kombu/kelp
1 shitake mushroom
pinch of salt
pinch of paper
1 table spoon of olive oil
laurel, coriander and cumin (optional)
some parsley to garnish
Step 1. Soak 2 pieces of kombu and 1 shiitake mushroom in 3 cups of water for one hour, and then bring the water to boil and simmer for 10 minutes. You can skip the soaking if you don`t have time, but it makes the stock tastier.
Step 2. Heat oil in a large pot over low heat, add diced pumpkin and onions and cook for 10-15 minutes on low heat until softened. Add a pinch of salt, stirring for 30 seconds.
Step 3. Add brown rice, laurel, coriander and 1/2 of the stock and bring to the boil. Turn heat to low, cover and simmer for 20 minutes. Allow to cool slightly, take the laurel out, then blend.
Step 4. Return porridge to pan, add the rest of the soup stock, stir through and reheat gently. Season and add a little cumin if desired.
